Annie Lee's Date Nut Cake
Date Nut Cake
ingredients
- 1/2 lb butter (Use Crisco if you do not have butter, margarine makes cake dry)
- 2 c. sugar
- 6 eggs
- 4 c. sifted flour
- 2 tsp baking powder
- 3 tsp vanilla
- 2 pkg. pitted dates (cut in 3 lengthwise strips)
- 3 pints broken pecan pieces

1.Cream sugar and butter.

2.Add whole eggs one at a time until all have been added and creamy.

3.Use 2 or more tablespoons flour to flour nuts and dates.

4.Sift remaining flour and baking powder together and add to egg sugar and butter mixture.

5.Add nuts,dates, vanilla. Pour into greased pan. Decorate top with pecan halves.

6.Cook at 250 for 2-2.5 hours. Cover with foil while cooking if top gets too brown.

7.Cake freezes well, let remain in pan until it cools slightly then remove and wrap in foil. Recipe date 12/27/66
