Dave’s specialty is making great, melty sandwiches like this one inspired by one of his favorite lunch spots.

ingredients

  • 1/2-3/4 Red Bell Pepper
  • 1/2 Small Onion
  • 1 Large Chicken Breast, cooked (like lieftover from a rotisserie chicken)
  • 1 T Balsamic Vinegar
  • Salt and Pepper to taste
  • 4 Slices Whole Wheat Bread or Pita
  • Spinach
  • Goat Cheese

directions

  • 1

    1. Thinly slice bell pepper and onion.

  • 2

    2. Heat pan over medium high heat. Spreay with a little oil and saute onion and peppers until soft and beginning to brown.

    3. Meanwhile, Shred chicken breast.

  • 4

    4. Toast Bread and spread Goat Cheese on two of the slices. Mound Spinach on the slices of bread without cheese.

    5. Add Chicken to Peppers and Onions. Toss until well mixed and warm.

  • 6

    6. Add Balsamic Vinegar toss to coat. Season with salt and pepper.

  • 7

    7. Mound Chicken onto Spinach toasts and top with cheese toasts.
