Upside Down Banana Cake
A great way to use up extra bananas. This cake is great with a scoop of vanilla ice cream. Any leftover cake can be crumbled into parfaits for another yummy treat
ingredients
- 1 Cup firmly packed light Brown Sugar
- 6 Tbsp Unsalted Butter, room temperature
- 1 Large Ripe Bananas (maybe more to cover the pan)
- 1 Box Cake Mix (Marble, Butter, Yellow or Chocolate mixes would all work well)
- Eggs, Oil, Water as called for on the box
- 1 Mashed VERY Ripe Banana

1. Heat oven to 350*

2. In an electric mixer, cream the butter and brown sugar until well mixed

3. Spread brown sugar mixture over bottom of sprayed pan

4. Arrange banana slices (at least 1/4” thick) on top of brown sugar mixture, covering completely. Set pan aside

5. Prepare cake mix as directed on the box but decrease water by 1/4 cup. Add very well mashed banana to liquid ingredients.

6. Pour Batter over bananas in the pan.

7. Bake until cake pulls away from the sides of the pan and tester comes out clean (45 min—check what the cake mix box recommends)

8. Cool slightly (15min or so) then turn cake out onto plate. Serve warm or at room temperature.
