Karen's Kajun Krabs
ingredients
- 4 tablespoons butter
- 2 tablespoons flour
- 1 cup chopped celery
- 1/2 green pepper, chopped
- 1 small onion, chopped
- 1 cup milk
- 1 pound crab meat
- 1 egg
- 1/8 teaspoon black pepper
- 1 pinch of red pepper
- 1 tablespoon lemon juice
- 1 tablespoon Worcheshire
- 1 tablespoon mustard
- 1/2 teaspoon salt
- toasted butter crumbs/butter

Melt butter in saucepan. Add flour, celery, green pepper, onion and milk. Stir this mixture until well blended and slightly thickened. Pour this sauce over crab meat in bowl. Add beaten eggs and seasoning. Grease individual baking shells or casserole and fill with crab mixture. Sprinkle with bread crumbs and top with small, thin slices of butter. Bake fifteen to twenty minutes in 400 degree oven until lightly browned.
