Holiday Pumpkin Roll

ingredients

  • 6 eggs
  • 2 cups sugar
  • 1 1/2 cups pumpkin
  • 2 tsp. lemon juice
  • 1 1/2 cups flour
  • 1 tsp. baking powder
  • 1 tsp. pumpkin pie spices
  • 1 tsp. salt
  • 2 cups chopped nuts (pecans or walnuts)
  • Orange Filling:
  • 2 cups powder sugar
  • 1 - 8 oz. pkgs. cream cheese
  • 1/2 margarine
  • 1 tsp. orange extract

    Beat eggs on high speed of mixture for 5 minutes and add sugar gradually, blend well. Stir in pumpkin and lemon juice.

    Stir together; flour, baking powder, spices and solt. Fold unto pumkin mixture. Measure out 3 1/2 cups of batter, spread into greased and floured 15“x10”x1" cookie sheet. Spread other half into second similarly prepared pan. Top each pan with 1 cups nuts. Bake cake (one at a time) in oven at 375 degrees for 15 minutes. Remove from oven and turn out on clean towel sprinkled with powder sugar. Starting at narrow end roll towel and cake together. Cool then unroll.

    Spread half of orange filling on each cake. Roll cake up again (without towel this time) & chill.

    Combine all ingredients and blend well until smooth.

    Note: Cake may be frozen for later use.
