Honey Garlic Grilled Eggplant
ingredients
- 1 Eggplant
- 1 TBSP honey (I use more)
- 2 TBSP olive oil
- 2 mashed cloves of garlic
- 2 tsp balsamic vinegar
- salt & pepper

Peel stripes off the eggplant to create a zebra pattern..makes it decorative and easy to bite into. Slice eggplant in 1/2 inch thick slices (circles)

Generously sprinkle both sides of eggplant with salt and place on a paper towels. The eggplant will release a lot of liquid, this rids of bitterness and makes the eggplant more succulent and less watery after it is cooked. Let sit for 15 minutes and dry both sides well.

Combine all other ingredients and dip eggplant into it...I let it soak a few minutes.

Heat grill...wipe it with a bit of olive oil on paper towel so eggplant doesn’t stick. Grill about 3 minutes on each side over medium heat.
