Chicken Chile Soup
This makes a huge amount of soup, but it freezes well, so it’s worth the time to make a batch and then store in portion containers for an easy lunch.
ingredients
- 4 or 5 chicken breasts, grilled. Cut them up and set to the side.
- Saute about 1/2 an onion,chopped with 2 cloves garlic in 1 tsp oil until onions are translucent.
- 1 can crushed tomatoes
- 34 ozs fat free chicken broth
- 3 cups water
- another can of chopped tomatoes if you like tomatoes
- Bring to a boil then add to taste (about 1 tsp of each)
- Cumin, chili powder, garlic powder, chopped fresh cilantro, parsley.
- Salt and pepper to taste.

When all this is boiling, reduce heat to a simmer then add:

1-2 cans black beans, drained and rinsed

1/2 cup salsa

Add chicken and let simmer for 20 minutes.

Low fat cheese, or sour cream

fresh cilantro
