Basic Vegetarian Polenta
ingredients
- 1 cup organic polenta corn meal
- 3 cups veggie broth (Imagine No-Chicken Broth)
- 1/4 t salt
- 3 T grated Parmesan cheese
directions
Bring the broth to a simmer in a saucepan. Add salt. Add polenta in a thin stream while stirring constantly, over medium heat. Continue stirring for about a minute until the polenta just separates from the sides of the pan. Add cheese and continue stirring until cheese disappears. For stiffer polenta cook for an extra minute, for softer add slightly more liquid.
