Baked Potatos
ingredients
- 4 medium russet potatoes, scrubbed
- 2 T butter for cooking broccoli
- 2 cups chopped broccoli
- salt and pepper
- 1 cup grated cheddar cheese
- 1 cup cottage cheese
- 1/2 cup sour cream
- 1/2 cup black olives
- 1/4 cup minced chives or scallion tops
- Salsa

Preheat oven to 400°. Pierce each potato several times with a fork. Bake, unwrapped, directly on oven rack for about 45-50 minutes, or until tender.

Sauté broccoli in butter and salt lightly. Cover and cook until bright green and tender, about 5 minutes.

Place all of the ingredients in small bowls on the table.
