Grilled Cheese and Broccoli Sandwiches

Makes 4 servings (2 open-faced sandwiches for each person)

ingredients

  • 1/3 cup plus 2 T olive oil
  • 1/2 cup minced red onion
  • 2 cups chopped broccoli
  • 1/2 t salt
  • 1/2 t dried thyme
  • 8 slices of bread
  • 2 cups grated cheddar cheese

directions

    Sauté the onions on medium for 2 minutes, then add the broccoli. Sprinkly in salt and thyme. Stir and cook for about 8 minutes, until broccoli is bright green.

    Remove veggies from pan and place in a bowl. Pour 1/3 cup of olive oil into a cup and brush both sides of each slice of bread with oil.

    Place the pan back on the stove on medium heat. Put 1 - 2 slices of oiled bread in the pan and cook until the bread is golden brown underneath. Flip over the bread and turn down heat to low. Place broccoli mixture in the middle of each slice of bread, then sprinkle some cheese over the broccoli. Cover the pan for about 3 minutes.
