Tomato Goat Cheese Bruschetta
Super easy and quick! Serve as a light dinner dish with a green salad.
ingredients
- 1 log (8oz.) soft goat cheese
- 1 can organic diced tomatoes (14.5 oz)
- 1/4 cup coarsely chopped pitted kalamata olives
- 1 t. chopped fresh thyme
- 1/4 t. crushed red peppers
- 1 T olive oil
- 24 1/2 in.-thick slices of baguette, toasted
- olive oil for baguette slices

Smoosh the goat cheese with a fork to cover the bottom of a 9" square baking dish. Spread the drained tomatoes and other ingredients on top. Bake at 350° for 15-20 minutes.

Cut the baguette slices and brush with olive oil. Place on a cookie sheet and broil on low until lightly browned.
