BEEF- Ginger Beef Rice

ingredients

  • 1 beef sirloin steak (1 lb) cut into strips
  • 1 medium onion, sliced
  • 2 TBSP chopped fresh ginger root or 2 tsp. dried ground ginger
  • 1 can (14 1/2 oz.) beef broth
  • 2 cups broccoli florets
  • 1 cup shredded carrots
  • 2 oranges, peeled, chopped and seeds removed
  • 1 1/2 cups Minute Rice, chopped

directions

  • 1

    COOK and stir beef in 1 TBSP oil in large non-stick skillet on high heat for 2 min. Stir in onion and ginger; cook and stir an additional 1 minute.

    ADD beef broth; bring to a boil.

  • 3

    STIR in broccoli, carrots, oranges and rice; cover. Let stand 5 minutes. Stir and serve
