Curried Couscous
This is so good leftover for lunch and it is amazing to bring to a potluck, the flavour combination is so complex and sweet and yet all the ingredients are commonly in the cupboard.
ingredients
- 1 1/2 cups couscous
- 1 tablespoon butter
- 1 1/2 cups boiling water
- 1/4 cup plain yogurt
- 1/4 cup olive oil
- 1 teaspoon white wine vinegar
- 1 teaspoon curry
- 1/4 teaspoon turmeric
- 1 1/2 teaspoons salt
- 1 teaspoon pepper
- 1/2 cup carrots (finely diced)
- 1/2 cup fresh parsley (minced)
- 1/2 cup dried cranberries
- 1/4 cup sliced almonds
- 2 green onions (minced)
- 1/4 cup red onion (minced)

Place couscous in a medium bowl. Melt the butter in the boiling water and pour over couscous. Cover tightly with plastic wrap and allow to soak for 5 minutes. Fluff with a fork.

Whisk everything else together and pour over couscous. Mix well with a fork. Taste for seasoning and try not to eat it all. Serve at room temperature.
notes
Don't think this recipe is daunting because the ingredient list is long. It comes together in minutes and the couscous only takes 5 minutes to fluff up.
