Grouper Veracruz
ingredients
- 4-6 oz Grouper filets
- olive oil
- 2 C chopped onion
- 1 tsp cumin
- 1 clove garlic
- 1/4 C chicken broth
- 2 TBS chopped green olives
- 1 TBS lime juice
- 1 TBS capers
- 1 10 oz can chopped tomatoes
directions

season and sear filets

remove from pan

sautee onions,then add remaining ingredients

simmer 5 min

pour over fish, and bake covered in 400 oven for 20 min
notes
add 1/4 C orange juice Also works grilled in aluminium pan, baked with sliced chorizo sausage.
