This is one of the best pork recipes that we have ever tried. So incredibly delicious! It is also very easy to prepare and will be sure to impress any guest.

ingredients

  • 1 teaspoon salt
  • 1 garlic clove, minced
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon ginger
  • 1/4 teaspoon pepper
  • 1 boneless whole pork loin roast (5 pounds)
Glaze
  • 1/4 cup packed brown sugar
  • 1 tablespoon cornstarch
  • 1 cup orange juice
  • 1/3 cup water
  • 1 tablespoon Dijon mustard

    Combine the salt, garlic, thyme, ginger and pepper; rub over entire roast. Place roast with the fat side up on a rack in a shallow roasting pan. Bake, uncovered, at 350° for 2 hours.

    Meanwhile, in a saucepan, combine the brown sugar and cornstarch. Stir in the orange juice, water and mustard until smooth. Bring to a boil; cook and stir for 2 minutes. Brush some of the glaze over roast.

    Bake 1 hour longer or until a meat thermometer reads 160°, brushing occasionally with a glaze. Let stand for 10 minutes before slicing; serve with the remaining glaze.

Leftovers make excellent sandwiches. Just slice the meat thin and enjoy!
