Heather Ells' Famous Tortières
These are so good and they are the most amazing appetizer when people drop by over the holidays. Pop a couple dozen in the oven and serve with Sweet Mustard Sauce. Who needs M&M Meat Shop?
ingredients
Pastry:- 1 1/3 cup flour
- 1/3 pound margarine
- 1/3 cup sour cream
- 1/2 pound lean ground beef
- 1/2 pound ground pork
- 1 medium onion (minced)
- 1 clove garlic (minced)
- 1/2 cup chicken stock
- 1 teaspoon salt
- 1 teaspoon thyme
- 1 teaspoon sage
- 1 teaspoon dry mustard
- 1 medium potato (cooked & mashed)
- 1/2 cup sugar
- 1 tablespoon dry mustard
- 1/4 cup vinegar
- 2 eggs (beaten)
- 1 tablespoon butter

To make pastry, blend margarine into flour in a large bowl using a pastry cutter. Mix in sour cream and blend with fingers until dough sticks together. Form a ball and refrigerate in plastic wrap for at least an hour. Roll out pastry and cut into 3 inch circles. Cover with plastic until filling is cool enough to use.

To make filling, cook ingredients together until meat is no longer pink. Cool completely before using.

To make sauce, combine sugar and mustard in a pot. Stir in vinegar and eggs. Whisk over low heat until thick. Remove from heat and add butter.

To assemble, place a tablespoon of filling on each circle and flute edges with a fork. Quickly freeze on a cookie sheet until they are hard enough to store in bags without damaging the pastry. Bake from frozen for 25 minutes at 350 degrees.
