Wild Rice Pilaf
Fabulous side dish for just about any occasion. Makes a large amount too so very handy for pot luck suppers. This is really yummy leftover for lunch the next day.
ingredients
- 1 tablespoon vegetable oil
- 1/2 cup red onion (finely diced)
- 2 cloves garlic (minced)
- 2 carrots (diced)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups wild rice blend
- 3 cups chicken broth
- 1/2 cup red pepper (diced)
- 3 green onions (diced)

In a Dutch oven, heat oil and stir fry onion, garlic, carrots and salt & pepper. Add rice and stir fry to coat. Add stock and 1 cup water. Bring to the boil.

Reduce heat to minimum and simmer for 40 minutes. Stir occasionally to keep rice from sticking to bottom of pot.

Mix in red pepper and green onion just before serving.
