Tomato-Mozzarella Crostini

ingredients
- 4 Italian Tomatoes, peeled, seeded and coarsely chopped
- 2 Tbsp Chopped Fresh Basil Leaves
- 2 Tbsp Minced Red Onion
- 1 Small Garlic Clove, minced
- 2 tsp Aged Balsamic Vinegar
- 1 Baguette Bread (about 8“ long), cut into sixteen 1/2” slices, lightly toasted
- 2 oz Shredded Part-Skim Mozzarella Cheese

Preheat Oven to 375 Degrees. Place tomatoes on layers of paper towels to drain for 10 minutes. Transfer to medium bowl.

Add basil, onion, garlic, and vinegar; mix lightly.

Spoon about 1 Tbsp of mixture onto each baguette slice; top each with an equal amount of mozzarella cheese. Arrange on baking sheet.

Bake until cheese melts, 4-5 minutes. Serve immediately.
