Tomato-Mozzarella Crostini

ingredients

  • 4 Italian Tomatoes, peeled, seeded and coarsely chopped
  • 2 Tbsp Chopped Fresh Basil Leaves
  • 2 Tbsp Minced Red Onion
  • 1 Small Garlic Clove, minced
  • 2 tsp Aged Balsamic Vinegar
  • 1 Baguette Bread (about 8“ long), cut into sixteen 1/2” slices, lightly toasted
  • 2 oz Shredded Part-Skim Mozzarella Cheese

    Preheat Oven to 375 Degrees. Place tomatoes on layers of paper towels to drain for 10 minutes. Transfer to medium bowl.

    Add basil, onion, garlic, and vinegar; mix lightly.

    Spoon about 1 Tbsp of mixture onto each baguette slice; top each with an equal amount of mozzarella cheese. Arrange on baking sheet.

    Bake until cheese melts, 4-5 minutes. Serve immediately.
