Sudden Quiche Lorraine

ingredients

  • One 9 inch frozen deep dish pie shell
  • 8 oz bacon, cut into 1/2 inch pieces
  • 1 onion halved and thinly sliced
  • salt and pepper
  • 6 large eggs
  • 1 cup half & half
  • 1 cup shredded swiss cheese

    Preheat oven to 400°. Using a fork, prick the inside of pie shellk then bake for 8 minutes. Remove from oven, then lower temp to 325°.

    Meanwhile in a large skillet, cook the bacon over medium heat, stirring often, until crisp about 5 minutes; using slotted spoon, transfer to paper towels to drain. Add the onion, and 1/2 tsp each salt and pepper to the bacon fat in the skillet and cook over medium heat, stirring occasionally until softened, about 5 minutes. Increase the heat to medium-high and cook, stirring until the onion is golden, about 2 minutes. Transfer the onion to the pie shell.

    In a large bowl, beat the eggs with the half & half; stir in the cheese and cooked bacon. Pour the mixture into the pie shell. Bake until set, about 40 minutes. Let stand 10 minutes before slicing.
