Peanut Butter Power Bars
I have sent this recipe to everyone I know (sometimes more than once). In case you lost it or you need a reminder to make these, here you go. If you take these power bars on a hike and you pull them out of your bag you will be the hero of the day.
ingredients
- 1/2 cup packed brown sugar
- 1/4 cup light peanut butter
- 1/4 cup soy or skim milk
- 1/4 cup honey or molasses
- 1 teaspoon vanilla
- 3/4 cup whole wheat flour
- 3/4 cup oats
- 1/2 teaspoon baking soda
- pinch salt
- 1/2 cup raisins or dried cranberries
- 1/2 cup chocolate chips
- 1/4 cup sliced almonds
- 1/4 cup sunflower &/or pumpkin seeds
- 1/4 cup coconut
- 2 tablespoons or more ground flax seed

Preheat oven to 350 degrees.

In a large bowl, stir together brown sugar, peanut butter, milk, honey and vanilla. In a small bowl, stir together flour, oats, baking soda and salt.

Add oat mixture to peanut butter mixture along with raisins/cranberries, chocolate chips, almonds, sunflower/pumpkin seeds, coconut and flax. Stir until just blended.

Spread batter into a greased 9 x 13 pan. The mixture will be sticky, use a wet spatula or wet hands to spread. Bake for 25 minutes or until golden. Cool in the pan for a few minutes before cutting into 18 bars.
