Potato-Spinach Casserole

ingredients

  • 6 to 8 large Potatoes, Peeled, Cooked and Mashed
  • 1 cup (8 oz) Sour Cream
  • 2 tsp Salt
  • 1/4 tsp Pepper
  • 2 tbsp Chopped Chives or Green Onion Tops
  • 1/4 cup Butter
  • 1 - 10 oz. pkg Frozen Spinach, thawed and well drained
  • 1 cup Shredded Cheddar Cheese

    Preheat oven to 400°.

  • 2

    In a large bowl, combine all ingredients except cheese. Spoon into a greased 2-quart casserole. Bake uncovered for 15 minutes.

    Top with cheese and bake 5 minutes longer.
