Salad - Tartar Salad
ingredients
- 2 1/4 cup Salad Oil
- 1/4 cup Prepared Mustard
- 1 tsp Black Pepper, ground
- 1 1/2 qts Green Beans, cooked, cut
- 6 ea 2 oz jars pimiento slices, undrained
- Lettuce, as needed
- Parsley or Watercress as needed
- 3/4 cup Vinegar
- 3 Tblsp Salt
- 6 lbs Rare Roast Beef, cooked, cut into strips
- 1 1/2 cup Dill Pickles, chopped
- 1 cup Onion, chopped
- 12 Hard Boiled Eggs, cut in wedges
- 6 Hard Boiled Eggs, cut in wedges

Combine salad oil, vinegar, mustard, salt and pepper. Beat or shake until well mixed. Combine beef, green beans, pickles, pimiento and onions. Add dressing; toss lightly to mix. Add first amount of eggs, toss lightly. Pile on lettuce leaves.

Garnish with remaining eggs and parsley or watercress.

Serve as an appetizer with sesame wafers, if desired.
