Artichoke Pasta Salad

ingredients

  • 1 - 14 oz. can Artichokes
  • 1 tbsp Olive Oil
  • 1 tbsp Water
  • 1 tbsp Lemon Juice
  • 1/2 tsp Dried Basil
  • 1/4 tsp Dried Oregano
  • 1/4 tsp Black Pepper
  • 1 Garlic Clove - Minced
  • 3 cups cooked Radiatore Pasta
  • 2 cups Spinich - Thinly Sliced
  • 1 cup Seeded Tomatoes - Chopped
  • 1/4 cup Crumbled Feta

directions

Combine 2 artichokes, oil, water, lemon juice, dried basil, oregano, pepper and garlic in blender until smooth. Chop the remaining artichokes and combine with pasta, spinich and tomato. Pour artichoke mixture over pasta mixture and toss. Cover and chill at least 2 hours. Sprinkle with Feta.
