Vegetarian Chili
ingredients
- 1 large vadalia onion, thinly sliced
- 1 large red pepper, thinly sliced
- 3 garlic cloves, chopped
- 2 jalapenos, seeded and minced finely
- 1 (28 oz) can od diced tomatoes - do not drain
- have 15 oz can in reserve
- 2 cans dark red kidney beans - drained and rinsed
- 2 cans black beans - drained and rinsed
- 2 large carrots, peeled and sliced
- 1 bottle of beer
- 2- 2 1/2 cups vegetable broth
- 1 can tomato paste
- 2 tbs. chili powder
- 2 tsp. cumin
- 1 tsp. coriander
- 1 tsp. salt
- 1/2 tsp. pepper
- Can substitute 2 packages of old El Paso chili mixture
- 1 tbs dried mustard
- 1-2oz cubes baker’s chocolate

Caramelize onions 15-20 minutes in oliver oil with pinch of salt, pepper and sugar.

Add garlic last few minutes.

Add to crock pot with all vegetables.

Mix together beer, broth, and spices. Add to vegetables with chocolate.

Cook on low 6 hours or on high for 2 -2 1/2-3 hours.
notes
If assembling uncooked the night before- put everything in the crock pot except the beer and spices. These can be put in the morning of.
