Vegetarian Chili

ingredients

  • 1 large vadalia onion, thinly sliced
  • 1 large red pepper, thinly sliced
  • 3 garlic cloves, chopped
  • 2 jalapenos, seeded and minced finely
  • 1 (28 oz) can od diced tomatoes - do not drain
  • have 15 oz can in reserve
  • 2 cans dark red kidney beans - drained and rinsed
  • 2 cans black beans - drained and rinsed
  • 2 large carrots, peeled and sliced
  • 1 bottle of beer
  • 2- 2 1/2 cups vegetable broth
  • 1 can tomato paste
  • 2 tbs. chili powder
  • 2 tsp. cumin
  • 1 tsp. coriander
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • Can substitute 2 packages of old El Paso chili mixture
  • 1 tbs dried mustard
  • 1-2oz cubes baker’s chocolate

    Caramelize onions 15-20 minutes in oliver oil with pinch of salt, pepper and sugar.

    Add garlic last few minutes.

    Add to crock pot with all vegetables.

  • 4

    Mix together beer, broth, and spices. Add to vegetables with chocolate.

    Cook on low 6 hours or on high for 2 -2 1/2-3 hours.

notes

If assembling uncooked the night before- put everything in the crock pot except the beer and spices. These can be put in the morning of.
