Chicken Parmagiana
An easy weeknight dinner solution. I love Club House Italian seasoning. Serve with fettucini alfredo and a side salad.
ingredients
- 4 to 6 boneless chicken breasts
- 2 tablespoons Italian Seasoning
- 1/2 cup fresh grated parmesan cheese
- 1 cup bread crumbs
- 1/2 cup milk
- 1/2 cup flour
- 2 beaten eggs
- 1 bottle 3 cheese pasta sauce
- 2 cloves garlic (minced)
- olive oil
- 2 cups grated mozzarella

Mix the parmesan with the bread crumbs and the Italian Seasoning. Dip chicken in milk, then flour, then egg, then crumbs. Fry in garlic and olive oil until browned on both sides. Layer with sauce and cheese in a greased 9 x 13 pan.

Bake at 350 degrees for 45 minutes. Feel free to sprinkle with more parmesan and more Italian Seasoning.

I always buy minced garlic in the bottle. Too much waste with the fresh stuff, I invariably end up throwing it in the green bin. I chop up garlic only when the dish depends on fresh and strong garlickly taste. Why re-invent the wheel?
