Veracruz Stye Chicken
ingredients
- 2 chicken breast -- chopped
- 1/2 onion -- chopped
- 5 garlic clove -- chopped 4 tomatoes
- salt -- to taste
- 1 mild green chili -- sliced 1/3" thick
- 1 green pepper -- sliced 1/3" thick
- 1 onion -- sliced 1/3" thick
- 1 tablespoon olive oil
directions
Cook the chicken in just enough water to cover with the 1 garlic clove and 1/2 onion and a bit of salt. Put on low heat, cover until chicken is cooked. After the chicken is cool, shread. Saute onion. garlic and peppers in olive oil. Add tomatoes to vegetables and cook until tender. Add chicken to vegetables.

NOTES : Vivian Lindsay worked for Leo for years as his dental assisstant. Her nanny Tia was a superb cook and we loved this dish. It makes a wonderful filling for tacos or burritos. Just put out all the fix’ins and you have one great meal. I would suggest: gucamole, pica de gallo, sour cream, shredded cheese, shredded lettuce and pinto beans to make a feast!
