Chicken Souvlaki
A great recipe for the barbecue or the oven if the weather isn’t cooperating.
ingredients
Souvlaki:- 2 pounds chicken breasts (cubed)
- 1 large red onion (chunked)
- 1 green pepper (chunked)
- 1 red pepper (chunked)
- 8 skewers
- 1 onion (chopped)
- 1/2 tablespoon olive oil
- 1/4 cup fresh lemon juice
- 1/2 cup white wine
- 2 cloves garlic (minced)
- 1 tablespoon oregano
- 1 teaspoon thyme
- 1/4 teaspoon salt
- ground pepper to taste
- 2 bay leaves

Mix all marinade ingredients together in a large nonmetallic bowl or container. Add meat to marinade and marinate 1 to 4 hours.

Thread 6 or 8 pieces of meat on each skewer alternating with onions and peppers.

Place meat skewers on grill for 3 to 6 minutes on each side or in a shallow pan and broil for 3 to 6 minutes per side. The meat should be a little charred in my opinion. Before serving, squeeze a little fresh lemon juice over meat and sprinkle with a bit of oregano.

Serve with tzatziki.

Soak those skewers if you're using wooden ones, otherwise you'll have a charred mess.
