  • 1 cup flour
  • 1 tsp cinnamon
  • 1/2 tsp each of baking powder,
  • nutmeg,
  • salt.
  • 1 egg
  • 1/4 cup milk
  • 3/4 cup brown sugar
  • 1/2 cup melted butter
  • 1 tsp vanilla
  • 1 cup oatmeal (not instant)
  • 1 cup raisins
  • 1/2 cup shredded coconut (optional)

    Lightly coat a 9x13 baking dish with cooking spray.

    Mix dry ingredients in a large bowl. In another bowl, whisk egg and milk together. Whisk in sugar, butter and vanilla. Pour into flour mixture and stir until all the lumps of flour are gone. Stir in raisins, then oatmeal. Pour into pan and lightly use a fork to even mixture out.If you’d like, top mixture with coconut.

    Bake at 350°F until edges are golden- about 25 minutes.

    Let cool about 5 minutes on a wire rack then cut into bars. Bars can be stored at room temperature for up to 3 days, or frozen for later!
