Basmati rice pilaf with apricots
ingredients
- 1/4 c. chopped, dried appricots
- 2 tsps. lemon zest
- 2 c. cold water
- 3 tbsp. butter
- 1 tsp. garam masala
- 1 medium onion, diced
- 1 1/4 tsp salt
- 1 cup basmati rice
- Fresh ground pepper
- 1/3 c. fresh mint leaves
- 1/4 c. unsalted pistachios

1. Put apricots and lemon zest in the 2 c. cold water. Melt the butter in a medium saucepan over medium heat, add the garam masala and toast, stirring for 1 min. Add onion & 1/4 tsp. of the salt. Cook for about 6 min.

2. Stir in rice and cook until brown (4 mins). Stir in water with fruit & remaining salt & pepper. Bring to a simmer, cover & cook for 10 min. Let sit 5 min. Tear the mint over and top with pistachios.
