Butternut Squash Casserole
ingredients
- 1/3 c. butter, softened
- 1/2 c. brown sugar
- 2 eggs
- 1 5 oz. can evaporated milk
- 1 t. vanilla
- 1 c. mashed butternut squash
- TOPPING
- 1/2 c. Rice Krispies cereal
- 1/4 c. brown sugar
- 1/4 c. pecans
- 2 T. melted butter

Cream together butter and brown sugar. Add eggs, evaporated milk, and vanilla; beat well. Stir in mashed squash. (Mixture will be thin.)

Pour into greased 11“x7”x2" baking pan. Bake at 350 degrees uncovered for 45 minutes or until almost set. Meanwhile, mix together topping ingredients.

Remove squash from oven; sprinkle topping over top. Return to oven for 5-10 minutes or until bubbly.
