Chicken Pot Pie
ingredients
- 2 cups cubed boiled chicken (or turkey)
- 3/4 c. milk
- 1 3/4 c. chicken broth
- 2 1/4 c. frozen mixed vegetables
- 1/2 t. salt
- 1/3 c. butter or oil
- 3/4 c. chopped onion
- 1/3 c. flour

Mix first five ingredients together (chicken through salt). In medium frying pan, sauté onion in 1/3 cup butter. Add flour. Then add to chicken mixture.

Pour mixture into ready-made pie crusts. Use deep-dish crust for mixture and a regular crust for the top. Cover edges of crust with dull side of foil.

Bake at 425 degrees for 30 minutes. Cool before serving so inside is not runny.
