Salad-----Spring Pea Salad

ingredients
- 10 oz fresh or frozen peas
- 1 cup celery diced
- 1 cup cauliflower flowerets chopped
- 1/4 cup green onions diced
- 2 Tbsp pimento chopped (optional)
- 1/4 cup bacon cooked crisply and crumbled
- 1/2 cup sour cream
- 1/2 tsp Dijon mustard
- 1 cup Hidden valley Ranch Buttermilk
- dressing.
- 1 sm garlic clove minced
- 1 cup cashews chopped*

Rinse peas in hot water (or steam if fresh) and drain. Combine vegetable, nuts and bacon with sour cream.

Mix dressing, mustard and garlic together ; then pour over salad mixture.

Toss gently, then chill

*Macadamia nuts or salted sunflowers seeds and be used instead of the cashews.
