Salad-----Mediterranean Medley Salad

ingredients

Salad
  • 4 cups cooked rice cooled
  • 1 cup pitted ripe olives sliced
  • 2 (6 1/2 oz) cans solid white or chunk light tuna in spring water, chiller
  • 1/2 cup bacon bits1---- cup celery sliced
  • 1/2 cup radishes, finely sliced
  • 1 cup each red, green and yellow bell peppers
  • 1/2 cup green onion thinly sliced
  • 1 cup frozen peas, thawed
  • Lemon-herb dressing----Crisp salad greens
Lemon-Herb Dressing
  • 1 garlic clove-----------1/4 tsp salt
  • 1 tsp sugar
  • 1/4 c sunflower oil------1/4 olive oil
  • 1/4 cup fresh lemon juice
  • 2 Tbsp fresh basil minced
  • 2 Tbsp fresh thyme minced
  • 2 Tbsp fresh oregano minced
  • 1/2 tsp seasoned pepper

    Combine the rice, radishes, diced peppers, celery, gr. onion, peas and sliced olives with the prepared Lemon-Herb dressing. Mix gently to combine.

    Cover tightly and refrigerate several hours or overnight.

    To serve: Drain and flake chilled tuna into chunks and combine with chilled salad. Mound the salad over lettuce and sprinkle with bacon bits.

    Optional: Garnish with olives, cherry tomatoes and fresh herbs or parsley.
