Mexican Corn
ingredients
- 2 cups of corn
- 1 onion, sliced
- 1 clove of garlic, minced
- 3 Tbs. of oil
- 1/2 lb. zucchini
- 1 green pepper, chopped
- 1/2 cup chopped tomato
- 1 1/2 tsp. chili powder
- 1/3 cup grated cheddar cheese
directions
Saute onion and garlic in oil. Then add the zucchini and green pepper and saute for 3 min. Then add the rest of the ingredients except for the cheese. Pour in a buttered dish and bake at 350 degrees for 15 min. Sprinkle cheese on top and bake until melted.
