Balsamic Pork Tenderloin
This is a simple marinade, but tremendous flavor. With a bigger tenderloin, this is perfect for a weekend meal or a small dinner party. Be careful...Kyle will try to eat the entire thing himself!
ingredients
- 1.5 - 2 lbs pork tenderloin
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1 tsp italian seasoning (or substitute 1/2 tsp rosemary and 1/2 tsp thyme)
- Salt and pepper
- Fresh garlic cloves, sliced thin
directions
Preheat oven to 500°. Place tenderloin into a small glass pan. Cut slits into tenderloin about every 1/2 inch, deep enough to stuff garlic slices into. The more garlic, the more flavor. Mix together olive oil and vinegar and rub into the tenderloin. Sprinkle seasonings onto tenderloin. Cook for 20 minutes and pull from oven. Cover with foil and let meat rest for 10 minutes.
