Plum Raisin Strudel
ingredients
Strudel Dough- 2/3 cup oil
- 3/4 cup orange juice
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla
- 3 cups flour
- Grape or strawberry jelly (enough to spread over dough)
- 1/2 cup cheerios (crushed like bread crumbs)
- 1 lb of prunes, cut up
- 1 cup seedless raisins
- 1 cup chopped nuts
- Little Lemon juice
- 1/2 cup sugar
- 1 tsp cinnamon
- 1 cup pineapple jam
- 1 cup golden seedless raisins
- 1 cup chopped walnuts
- Mix jam, raisins and walnuts. Spread over dough and roll up like a jelly roll.

1. Mix the dough and roll it into a thin sheet.

2. Divide the dough into 3 parts and roll to fit 9x 12 inch greased pan.

3. Place first layer of dough on the pan.

4. In a sauce pan cook prunes, raisins, sugar, nuts, and lemon juice, until gently caramelize, about 6 to 8 minutes. Let fruit cool to room temperature.

5. Dot dough with jelly or jam and sprinkle with 1/ 2 of the crumbs. Spread 1/2 the fruit out on dough, leaving a 2-inch border all around

6. Repeat dough layer, then prune layer and sprinkle with crumbs, topping with dough.

7. Sprinkle with cinnamon and sugar on top.

8. Bake in well greased pan for 40 minutes at 350
