Cheesy Potato Casserole
I first had this dish on Thanksgiving so I always associate it with the holiday but it would be good side dish for any meal, it is a great alternative to regular mashed potatoes.
ingredients
- 32 oz. pkg. frozen hash browns, thawed
- 1 pint sour cream
- 2 cans cream of potato soup
- 8 oz. sharp cheddar, grated
- 2 tsp. cajun seasoning
- 1 tsp. pepper
- 1/4 cup chopped onion
- 1/2 cup parmesan cheese
directions
Mix together all ingredients except for parmesan. Pour into a lightly greased 9“x13” pan. Sprinkle with Parmesan cheese. Cover and bake at 350°F for 60 minutes. Remove cover and bake for 30 minutes more.
