Not Your Mother's Meatloaf
Laura Schroder says, “my mother’s meatloaf had about four ingredients: ground beef, oatmeal, ketchup and onion…blah city. There was no way this recipe would be passable in my family so I developed this new one that uses the more traditional meatloaf meats of ground veal, pork and beef, along with some interesting spices and veggies that give it a new twist to the old standard.”
ingredients
- 1/2 cup seasoned breadcrumbs
- 2 lbs meatloaf mixture (1/3 ground veal, 1/3 ground beef, 1/3 ground pork)
- 8-10 crimini mushrooms chopped
- 2 long celery stocks chopped finely
- 1 onion chopped finely
- 5 minced garlic cloves
- 1 tablespoon olive oil
- 2 beaten eggs
- 1/2 cup ketchup
- 1 teaspoon basil
- 1 teaspoon cumin seeds
- 3 teaspoons fennel seeds
- t teaspoon garlic salt (to taste)
- 1/3 – 1/2 cup bbq sauce

1. Preheat oven to 375 degrees.

2. Saute mushrooms, celery, onion and garlic cloves in olive oil till soft, let cool.

3. Whisk egg, ketchup, basil, cumin, fennel and garlic salt .

4. Add whisked ingredients and sautéed ingredients to meat and breadcrumbs in a big bowl.

5. Form meat mixture into the shape of a football in a 9 x 13 pan. Cook 45 minutes.

6. In last 10 minutes (after 35 minutes has passed), coat with bbq sauce and cook for remaining 10 minute.

To serve: Slice and serve with extra bbq sauce.

The veggies can be chopped sauteed ahead of time. Then all you have to do is integrate them in to the remaining ingredients and pop it in the oven. This dishes also freezes and reheats well.
