Kona Banana Bread
ingredients
- 1 cup shortening
- 2 cups sugar
- 4 well beaten eggs
- 6 medium or 4 large, ripe bananas, mashed
- 2 1/2 cups flour
- 1 tsp salt
- 2 tsp baking soda
- 1 cup chopped walnuts or pecans
directions

Cream shortening with sugar. Add mashed bananas and beaten eggs. Blend in dry ingredients and nuts. Mix all together but do not over-mix.

Bake at 350 degrees for 45-50 minutes. Makes two 1 lb.4 oz. loaves. (or bake in 3-4 small pans and use less time for baking.
