Pumpkin Praline Pie
This is a great pumpkin pie recipe. The eggnog gives it a really nice flavor and the praline topping is delicious. This is, of course, a classic dessert for Thanksgiving. Serve with whipped cream or vanilla ice cream.
ingredients
Crust:- 1 1/4 cups flour
- 1/4 tsp. salt
- 1/2 cup butter, chilled and diced
- 1/4 cup ice water
- 1 egg mixed with 3 Tbs. water
- 1 15 oz. can pumpkin
- 1 1/4 cups eggnog
- 2/3 cup sugar
- 1 1/2 tsp. pumpkin pie spice
- 1/4 tsp. salt
- 3 eggs
- 2/3 cup chopped pecans
- 1/2 cup brown sugar
- 1 tsp. light corn syrup
- 1 tsp. vanilla

Crust:

In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in water, one tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 4 hours or overnight.

Sprinkle counter and rolling pin with flour. Roll dough into a large circle (about 14“ around) Place crust in a 9” pie pan. Press the dough evenly into the bottom and sides of the pie plate. Brush the edges with egg/water mixture. Fill crust with pie filling.
Filling:
Mix all filling ingredients and pour into prepared pie crust. Bake at 375°F for 40 minutes.
Topping:
Combine topping ingredients and sprinkle over pie 25 minutes into the baking time. Shielding the crust with a pie shield or aluminum foil at this time as well to prevent excessive browning. Bake pie for 10-15 more minutes or until set. Cool completely on a wire rack.
