CHEESY HASH BROWN BREAKFAST CASSEROLE
ingredients
- 2 Tablespoons Butter
- 1 Tablespoon Extra Virgin Olive Oil
- 1 Yellow Onion - Chopped
- 10 3/4 Ounce 98% Fat Free Cream of Mushroom Soup
- 16 Ounce Sour Cream
- 1 Pound Cubed Smoked Ham
- 2 Pounds Frozen Hash Browns - Thawed
- 2 Cups 2% Mild Cheddar Cheese - Shredded
- 1 Cup Crushed Potato Chips – Equal to About 1 Small Bag
- 1/4 Cup Butter Melted

Preheat oven to 350 degrees.

Heat butter and 1 tablespoon of oil in a skillet over medium high heat. Add onions and saute until they start to caramelize.

Mix all ingredients through cheese in a large bowl. Spoon mixture into a 9X13 lightly greased baking dish.

Bake for 45 minutes. Cover with potato chips and drizzle the melted butter over the top. Bake for an additional 20 minutes.
notes
You could easily substitute ham for sausage to give it a different flavor.
