Chicken or Turkey Tetrazzini (Maggie)

ingredients

  • 1/4 c. butter
  • 1/2 lb. fresh mushrooms, sliced
  • 1/4 c. flour
  • 1 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/8 tsp. pepper
  • 1/8 tsp. nutmeg
  • 1 tsp. dried parsley
  • 2 c. milk
  • 2 c. half and half
  • 2 chicken boullion cubes
  • 1/3 c. dry sherry
  • 2/3 c. parmesan cheese
  • 8 oz. thin spaghetti cooked
  • 2 c. cooked chicken or turkey, cubed

directions

Saute mushrooms in butter until tender. Blend in the flour and seasonings. Add milk and 1/2 and 1/2 and bouillon cubes. Cook, stirring constantly until thick and smooth. Add sherry, 1/3 cup parmesan cheese, spaghetti and chicken/turkey. Stir carefully. Pour into casserole and sprinkle with remaining parmesan cheese. Bake 375 until hot and bubbly, about 20-25 minutes.
