Roasted Sweet Potato Rounds with Black Bean Cream
ingredients
- 2 large sweet potatoes, sliced 1/8 inch thick
- 1/4 cup olive oil
- Salt and pepper to taste
- 2 cans (15.5 oz each) black beans, drained and rinsed
- 1 cup sour cream
- 1 tsp ground cumin
- Chopped scallions for garnish
directions
Heat oven to 450 degrees. Line two baking sheets with foil; lightly coat with nonstick cooking spray. Place potato slices in single layer; brush with olive oil and sprinkle with salt and pepper. Bake 18-22 minutes or until slightly crisp. In food processor combine beans, sour cream and cumin to chunky consistency; season with salt and pepper. Evenly divide bean cream on potato slices; garnish with chopped scallions.
