Shrimp with Spicy Mango Salsa
ingredients
- SHRIMP
- 1 cup olive oil
- 1 cup chopped onion
- 1/2 cup chopped flat-leaf parsley
- 1/2 cup chopped basil
- 1/4 cup fresh lemon juice
- 2 Tbsp minced garlic
- 1 Tbsp Dijon mustard
- 2 tsp dry mustard
- 2 tsp salt
- 1/4 tsp pepper
- 3 lb jumbo shrimp, peeled and deveined
- SALSA
- 2 Tbsp olive oil
- 1/2 cup chopped onion
- 1 jalapeƱo, seeded and chopped
- 2 tsp minced ginger
- 1 tsp minced fresh garlic
- 2 ripe mangoes, peeled and coarsely chopped
- 1/3 cup fresh orange juice
- 2 tsp light brown sugar
- 1 Tbsp minced fresh cilantro
- Salt and pepper to taste

TO PREPARE SHRIMP:

In large bowl combine all ingredients; toss well. Cover with plastic wrap, refrigerate 1 hour. Prepare charcoal grill with medium-hot coals, or heat gas grill to medium-high, or heat broiler. Remove shrimp from marinade (discard marinade). Grill shrimp 2-3 minutes, turning once, or until cooked through. Serve with salsa.

TO PREPARE SALSA:

In medium bowl combine first 9 ingredients. Cover with plastic wrap and set aside for 30 minutes. Season with salt and pepper.
