Italian Potato Soup

A hearty potato soup with Italian sausage and kale.

ingredients

  • 6 large Idaho potatos peeled and cut in cubes
  • 2 quarts of chicken stock
  • 1 lb. bulk Italian sausage
  • 1 can evaporated milk
  • 2- 3 large stalks of celery chopped
  • 1 small onion chopped
  • salt
  • pepper
  • 1 t. fennel seed or more if you like it
  • 2-3 handfuls of kale

    Brown Italian sausage and fennel seed in large soup pot; crumbling as you saute it.

    Remove sausage when cooked. Saute celery and onion in sausage grease until tender.

    Add cubed potatos, chicken stock, salt and pepper to taste. Simmer until potatos are tender. Just before serving add evaporated milk and kale. As soon as kale is wilted soup is done.
