Grandmother's Potato Patties

ingredients
- 1 cup left over mashed potatoes
- 1 egg, beaten
- 3 to 4 tbs. flour
- salt and pepper (I use garlic pepper)
- 1 to 2 tbs. grated onion
directions

Combine all ingredients and mix until smooth.

Heat about 1/2 inch of oil, heated to approximately 375° Bacon grease can also be used, if you don’t mind the unhealthy factor in doing so. (It does make them taste good.)

Using a large tablespoon, drop into oil and press in the middle until flattened to about 1/2 inch thickness.

Fry until golden brown, turning once.

Do not fry in too hot of oil, because they will brown before they are done in the middle.

My mom made the best potato patties, and I am sure she used bacon grease to fry them. But, they are still yummy using oil.
