Spicy Tomato Prawns
ingredients
- 1 tbsp olive oil
- 3 garlic cloves, crushed
- 1 large onion, finely chopped
- 1 yellow pepper, seeded and diced
- 400g can chopped tomatoes
- 1 tsp sugar
- 2 tsp salt
- 1 bay leaf
- 1 1/2 tsp fresh thyme leaves of 1/2 tsp dried thyme
- 1/4 tsp cayenne pepper
- 1lb (900g) raw prawns peeled and deveined
- 1/2 tsp grated lemon rind
- 2tbsp fresh lemon juice

Heat the olive oil in a non stick frying pan.

Add the garlic, onion and pepper and cook until softened, about 5 minutes.

Add the tomatoes, sugar, salt, bay leaf, thyme and cayenne. Bring to the boil then reduce the heat and simmer for 10 minutes.

Stir in the prawns, lemon rind and juice and pepper to taste.

Cover and simmer until the prawns turn pink, about 5 minutes.

Serve immediately on a bed of freshly cooked rice.
