Honey-Granola Cookies
Yeah, you can eat these for breakfast! These have all the same hearty, good stuff in your everyday granola. Got milk?...or better yet, hot green tea.
ingredients
- 3/4 cup brown sugar
- 1 stick unsalted butter
- 1/2 cup clover honey
- 1/4 cup water
- 1/2 teaspoon kosher salt
- 2 teaspoons vanilla extract
- 3 cups old fashion oats
- 2/3 cup (3 ounces) dried tart cherries
- 1/2 cup toasted wheat germ
- 1/2 cup slivered almonds
- 1/2 cup sweetened coconut
- 1/3 cup sunflower seeds
- 1/3 cup sesame seeds
- 1/3 cup Pepita’s
- 1/2 teaspoon kosher salt
- 1/2 cup semisweet chocolate chips (optional)

Preheat oven to 350

In a large saucepan combine brown sugar, honey, butter, water and salt.

Off heat, stir in vanilla.

Combine all dry ingredients and add to honey mixture; stir to coat.

Fill a #16 scoop or fill a 1/4 cup measuring cup) with dough. Pressing against side of pan to level.

Drop dough 4" apart onto baking sheets lined with parchment paper; flatten slightly with scoop.

Bake at 350 for 13-15 minutes or until set and golden.

Transfer to rack and cool 20 minutes before serving.

*Optional chocolate chips must be added to cooled dough only.
