MEDITERRANEAN SUMMER SALAD
ingredients
- 8 oz. orzo pasta
- 2 C. halved cherry tomatoes
- 1 C. fresh basil leaves, chopped
- 1 t. minced garlic
- 1/4 C. toasted pine nuts
- 1/2 C. Greek olives such as kalamata, pitted and halved
- 4 oz. feta cheese, broken into chucks
- 2 C. baby spinach leaves
- 1 T. olive oil
- 2 T. balsamic vinegar
- Salt and freshly ground black pepper

Cook orzo according to the package direction.

Meanwhile, in a large bowl, combine tomatoes, basil, garlic, pine nuts, olives, feta, and spinach. Add cooked orzo.

In a small bowl, whisk together oil, vinegar, and salt and pepper to taste; toss with salad.
