Catus Salad
Many have not had the sheer pleasure of eating cactus. It’s very mild and has the taste and texture of green beans out of a can. But don’t be fooled by that description, this salad will tantalize your taste buds.
ingredients
- 1 jar (15 ounces) Nopalitos* drained
- 2-3 Roma tomatoes, chopped
- 1/2 medium sweet onion chopped fine
- 1/2 bell pepper, chopped fine
- 1/3 cup fresh cilantro, chopped
- 1 jalapeno pepper (optional), chopped fine
- 1/2 to whole avocado, seed removed and diced.
- 1/4 cup feta cheese, crumbled
- Dressing
- 1 tablespoon lime juice
- 1 tablespoon red wine vinegar
- 1 tablespoon olive oil
- salt and pepper to taste

Combine the first 8 ingredients.

Whisk dressing ingredients and pour over salad; toss well to coat.

This salad can be made a few hours ahead of time.

Refrigerate until needed.

* Nopalitos is the cactus plant and can be found in the Latino section in most grocery stores.
